14 Valentines: two recipes

Two recipes, because it utterly slipped my mind yesterday.

Day 13: Arts & Athletics

Chocolate zucchini bread
Makes 2 loaves.

Ingredients

* 3 eggs
* 1 cup oil
* 2 cups sugar
* 2 teaspoon vanilla
* 1 teaspoon baking soda
* 1 teaspoon salt
* 1 teaspoon cinnamon
* ¼ teaspoon baking powder
* 3 cups flour
* 6 tablespoons cocoa
* 2 cups grated fresh zuccinni

Preparation
Cream together eggs, oil, sugar, and vanilla. Sift dry ingredients, add alternately with zuccini to creamed mixture. Grease and flour 2 8 ½x4 ½” pans. Bake 1 hour at 350° or until done.

Chocolate buttermilk cake with cream cheese frosting
Ingredients

* 3 cups flour
* 2 cups sugar
* 2 teaspoon baking soda
* ½ teaspoon salt
* 1/3 cup cocoa
* 2 eggs
* 1 cup oil
* 1 cup buttermilk
* 1 teaspoon vanilla
* 1 cup boiling water

Preparation
Mix flour, sugar, soda, salt, and cocoa. Add eggs, oil, buttermilk and vanilla. Mix well. Add boiling water. Pour into 9×15 greased cake pan. Back at 350° for 35-40 minutes.

Cream Cheese Frosting

Ingredients

* 1 small package cream cheese
* 1/3 cube butter or margarine
* 1 teaspoon vanilla
* Powdered sugar as needed

Preparation
Beat until fluffy.
